What would put me right off is "MOST OF THE TRIM IS THERE". Dollars to

Yeah but I wouldn't be building concourse would I.
And in the true Kustom tradition, bits from different makes from a
similar age would be fitted to make that up.
Like the idea of putting Cadillac rocket tail lights onto a 57 Chevy
(common in the 50's as putting Lexus "Style" lights on a Paxo now) would
still work just as well. If it is badges and trim strips, then smooth
it. Make what isn't there the focus. I've been told by someone I have
met up with a couple of times, and have long interweb discussions with
regularly about rods and customs (RichKP may know him), and who happens
to be one of the most fabulous panel beaters you could ever meet, and
who also happens to own one of the most awesome 57 Chevies I have ever
clapped eyes on anywhere, and has been on telly with Richard Wilson,
that the mega expensive stuff on those old Caddies are things like the
bumpers and that appears to have them there. Small trim items can be had
from the states. Large trim items too, and then get them re-finished
here, but it is the postage cost for moving a lump of iron girder across
oceans in less time than glacial movement that costs the silly big
money.
